Anxi Tie Guan Yin is the most famous of all Chinese Oolong teas. The name Tie Guan Yin means “Iron Goddess of Mercy” and the tea is as magnificent as its name implies. This tea has a very sweet and appetizing honey-life fragrance.

Oolong tea first began to be produced at a small plantation in the Wuyi Mountains of Fujian, China at the end of the Ming Dynasty about 400 years ago. It's the location of some of the finest and rarest teas in the world. The tea is created using the same oxidation process that turns green tea into black tea, but the process does not take as long. So Oolong tea is a cross between green and black tea, having some of the characteristics of both, with moderately high levels of polyphenol antioxidants, such as epigallocatechin gallate (EGCG), but a more robust taste.

In recent years, oolong tea has proven itself a healthy part of any diet. With about half the caffeine of coffee, it has the capability of being a drink everyone will be drinking several times a day.

    How to make tea? ---- Semi-fermented Tea (Oolong Tea, Tie Guan Yin Tea)

  1. Pre-heat the teapots: wash teapot, fair cup, teacup and fragrance-smelling cup with hot water. Put teapot lid in the tea tray, and pour near boiling water to half full into the teapot, Cover the teapot, and shake the teapot slowly. Then pour the boiling water in turn into the fair cup, tea cup and fragrance-smelling cup. Pour the remaining boiling water into the tea tray.

      2. Put a certain amount of tea into the teapot. For stripe-style Oolong Tea, the amount of tea is about two-third full of the teapot. For spherical and hemispherical Oolong tea, one third is ok. It also depends on the numbers of the people who drink the tea. Brewing: pour the boiling water into the teapot to overflow, remove the floating foam, and cover the teapot.

 

    3. Pour the boiling water on the teapot counter-clockwise until evenly heated. This can make the tea fully brew.

    4. Flush the cups one by one with the hot water when the tea is steeping. After that, pour the hot water to the tea tray, and put the teapot set in order.
